Cajun Eggs Benedict

4 frozen crab cakes, when in a rush, I like those at Costco, or make from scratch
1 package The SalsaKing's Cajun Party Dip Mix
4 Eggs, poached in some water with a teaspoon of vinegar added
1 cup milk
1 tablespoon butter and flour

In a small sauce pan, make a white sauce with the butter and flour, cooking several minutes or until the roux begins to darken. Add the milk, whisk until smooth and bring to a boil. Add the Cajun party dip mix and reduce to simmer. Poach the eggs, cook the crab cakes according to package, or recipe. Place poached egg on crab cake, cover with sauce, serve.
