Cheesy Chipotle Spinach Dip

8 ounces Frozen chopped spinach, thawed
2 cups Sour cream
16 ounces Cream cheese, softened
2 cups Shredded Monterey Jack cheese
4 tablespoons The SalsaKing's Sonoran Chipotle Barbeque Rub

Drain spinach well and squeeze out as much liquid as possible.

Combine spinach with remaining ingredients. Mix thoroughly. Pour mixture into a baking dish coated with non-stick cooking spray.

Bake at 325ºF for 45 minutes or until cheeses have melted and internal temperature is at least 145ºF. Serve with crisp tortilla chips or crusty bread.
