Egg Pepper Boats

4 large well rounded flat bottomed bell peppers
8 - Eggs
1 - cup shredded cheese
1/2 cup diced onions
1/2 cup diced green or red bell peppers, or combination of both
1 tablespoon olive oil
1 - cup The SalsaKing's Merlot Green Chili Salsa
1/2 - cup sour cream

Cut the tops off the bell peppers and remove veins and seeds, set aside. Beat the eggs well. Add the cheese and mix well. In small saucepan, saute the onions and peppers in the olive oil until soft, mix into the egg cheese mixture. Place the peppers into a casserole and pour about two tablespoons salsa into the bottom of each pepper. Evenly divide the egg mixture and pour into each pepper. Add about 2 inches boiling water to pan, place pan into 350 degree oven to bake about 20 to 25 minutes. Carefully remove peppers to serving dish. Top with small amount of remaining salsa and then a dollop of sour cream.
