Eggs ala Camarones

For two people

4 - eggs
1/2 cup grated cheese
1/4 cup Pepitas y Camarones Salsa

Take 2 pyrex custard cups that hold about a half cup each, butter generously. Break 2 eggs into each, spoon half the salsa over the eggs in each cup and then spread cheese over each. Bake in 375 oven for 20 minutes. Serve with tortillas, toast and jalapeno jelly, or on their own.
