Potatoes Diana ala SalsaKing

This is the SalsaKing's version of a quickie classic, Potatoes Diana. It is easy, rich and cheesy. And now this version is spicy and fantastic, a great Southwestern side dish for everyone to enjoy.

1 32 ounce package of shredded potatoes, frozen or the kind in the egg section of the market. Or shred your own.
1 large onion cut thinly and then into long shreds
1/4 cup The Salsaking's Sonoran Chipotle Barbeque Rub
1/4 cup oil
1 cup sour cream
8 ounces shredded cheddar cheese

In a large skillet, heat to medium and add oil. Add potatoes and sprinkle the rub over all. Cook until soft. Add sour cream and cheese, turn to coat, serve.
