Rich Elegant Calabacitas

About 3 cups peeled, 1/2 inch diced Butternut Squash
1 large apple, diced
1 cup diced onions
1 cup apple juice
1 tablespoon each, butter and extra virgin olive oil
1/2 envelope SalsaKing's Jalapeno Margarita Party Dip Mix

Saute squash in oil and butter until lightly browned. Add onions and apple, saute for another 3 to 4 minutes. Add juice and dip mix, cook, uncovered until all liquid evaporates and squash begins to sizzle loudly. Serve.
