SouthWestern BBQ Taters

4 or so Big Baking Potatoes
1/4 cup The SalsaKing Sonoran Chipotle Barbeque Rub
1/4 cup Olive oil

Wash and scrub potatoes well. Dry. With a sharp knife, cut the potatoes in half lengthwise. Then each half cut into quarters, then eighths. Place into a large bowl and pour olive oil over. Toss to coat. Sprinkle the Barbeque rub over potatoes, toss to coat well. Place potato wedges on coolest part of grill skin side down, cover grill. Allow to bake in grill for 30 minutes or until tender inside and crisp outside. Serve. Any leftovers make great burritos for breakfast when mixed with scrambled eggs.
