Here's an elegant & easy dish that your friends will love. Take two egg whites and whip them into a stiff merinque with just a couple drops lemon juice. Fold in 1/4 - 1/2 cup Salmon Caviar. Then drop, by tablespoonfuls into hot olive oil. Turn once to brown top and bottom. Serve on top of a mixture of Cactus Salsa and sour cream. Very Nice!
